Even though caramels typically require relatively few ingredients, they tend to have a rich, deep flavor and textures that run the gamut from soft and chewy to hard and brittle. What Does It Take to Make Caramel?

At its most basic, caramel is made of heated sugar. Heating sugar to sufficient temperatures facilitates the process of caramelization, in which sugars darken and develop a rich, nutty flavor. Basic caramels can also include ingredients like water, milk, cream, butter, salt, and various flavorings. These ingredients are heated with the sugar to whatever temperature is required to achieve the desired texture, ranging from 230°F for syrups (the “thread” stage of cooking sugar) to 309°F for toffees (the “hard crack” stage). Once it is properly heated, the caramel mixture is poured and allowed to cool.
