In this blog, we’re taking a deep dive into one of many gourmet candy delicacies in our repertoire: the malted milk ball.

Virtually every candy connoisseur has a favorite treat — that one sweet morsel that transports them to another place. For some, it’s something elegant and high-brow like an artisanal truffle; others value the whimsy and childlike wonder that candies like gummi bears and jelly beans invoke. Malted milk balls are a staple in movie theaters, candy dishes, and chocolate shops everywhere, and there’s a reason that so many people clamor to get their hands on these little round morsels. In this blog, we’re taking a deep dive into one of many gourmet candy delicacies in our repertoire: the malted milk ball.

Malted Milk Balls are a Movie Theater Favorite

Malted milk balls have a flavor and texture that is wholly unique compared to other confections. Past their shiny chocolate shell, malted milk balls contain a center that is light, crispy, and unparalleled in flavor. The malt center provides a new dimension of nutty flavor and crunchy texture, all in an easy-to-eat, melt-in-your-mouth package. Aside from their obvious merits in terms of taste, malted milk balls are a cult classic because they are so easy to enjoy. They can be eaten quietly in a crowded theater, and it’s easy to grab a handful when you’re on the go. For these reasons, they remain a staple in concession stands across the country and across the pond.

What’s This Gourmet Candy Made Of?

One of the most interesting things about malted milk balls (and their fans) is that many people today aren’t all that familiar with the ingredient that makes these treats stand out. Malt powder was once a common addition to milkshakes, baked goods, and hot beverages. This ingredient is typically derived from malted barley, or barley grains that are allowed to sprout before being heated, dried, and processed. Malting gives all kinds of grains a more complex flavor by allowing the grains to convert some of their starch into fermentable sugars. This process is crucial in brewing beer, making malt vinegar, and — of course — creating malt powder for all kinds of treats. Once malted barley has been processed into a powder, confectioners make malted milk balls by combining it with corn syrup and dairy. This mixture is formed into balls and covered in rich chocolate, resulting in the malted milk balls that we all know and love.
