Origins
Chocolate truffles are said to have been created in the kitchen of Auguste Escoffier, who was a notable French chef. One day, Escoffier’s apprentice was attempting to make some pastry cream. During the process, he accidentally poured the hot pastry cream into a bowl that had chunks of chocolate in it. The apprentice found that eventually the mixture got hard, and he could roll it into the shape of a ball.
Why “Truffle”?
When you hear the word truffle, your mind probably conjures up an image of a mushroom. You may think that mushrooms have nothing to do with chocolate truffles, but that’s not the case! Even though chocolate truffles don’t contain any mushrooms, they got their name from the fungi because they have a very similar look.
Some Clarification
People have different ideas about makes a truffle a truffle, and we’re here to shed some light on that. First, it’s important to remember that not all truffles are the same. Truffles all have the same structure, but there are differences. For example, Belgian truffles have an exterior that is made simply of dark chocolate, while French truffles have ganache that has been rolled in cocoa powder. It’s essential to remember that the ganache is the most important ingredient you can look for when you’re trying to determine whether or not a chocolate treat is a truffle. If the filling is made of fruit or anything else, it’s not a truffle.
