We’ve talked about white chocolate before; nevertheless, it’s always good to know more. Everyone has their flavor preferences. Did you know that many people have strong feelings about the white variety? What exactly is it, and why is it so different from other flavors and textures and types? Here are the answers to those questions.
At the Base Level
White chocolate is much different from its counterparts, milk chocolate and dark chocolate. It’s easy to understand why once you examined it at its base level. The process isn’t that different. Cacao beans still need to be harvested; this happens in many countries around the world, not just in Africa. The seeds and the pulp are allowed to ferment before being cooked; the fermentation process makes the pods sweeter than they were right after the harvest. The pulp is stripped away, and what is left is sent to chocolate manufacturers for the next step.
The Roasting Process
At this point, the roasting process begins. Once that’s done, the outer layers are removed and the inner core is extracted. What’s left is smashed down into nibs. Think of them as the nib on a pen, the bit used to write with. The nibs are melted until it can be turned into cocoa butter. The cocoa solids are the base ingredient of milk and dark chocolate. This butter form is then mixed with other ingredients such as:
- Milk
- Sugar
- Vanilla
