There are some significant chemical differences between table sugar and sugar alcohols. Table sugar caramelizes when heated, and sugar alcohols do not. Oral bacteria can digest table sugar, converting it into the energy they need to wreak havoc on teeth. While sugar alcohols cannot be metabolized and therefore contribute to tooth decay in the same way, sugar-free candy can be slightly more acidic than traditional sweets. Many sugar alcohols are somewhat less sweet relative to sugar, but they also typically have lower carbohydrates, calories, and glycemic index values. It is important to note that sugar-free candy still contains calories and carbohydrates, so those who are looking to trim their waistlines should still enjoy it in moderation.
