The History of Cream-Filled Chocolates
The concept of cream-filled chocolates is based on simple pralines initially documented in the 17th century by Marshal du Plessis-Praslin. At the time, cocoa was relatively unknown in Europe, so the pralines of that day were mostly nuts coated in a layer of caramelized sugar. Due to all the new ingredients available from the New World, pralines began to evolve as the years passed.
The first cream-filled chocolates as we know them were believed to have been created in 1912 by Jean Neuhaus II, a Belgian chocolatier. These chocolates soon contained anything from various liqueurs to marzipan, fruits, caramel, and almost any other sweet filling. The most important aspect is that the center is creamy and delicious.
