Milk Chocolate
Milk chocolate is a type of chocolate that is made with at least 12% milk and 10% chocolate liquor, which is composed of cocoa solids and cocoa butter. Typically sweeter than its dark counterpart, milk chocolate also contains sugar and emulsifiers. Milk chocolate also has a softer texture to it than dark chocolate, and it melts relatively quickly.
White Chocolate
Some people say that white chocolate is not chocolate at all because it does not contain the cocoa solids that other types of chocolate do. Regardless of whether or not you subscribe to this theory, white chocolate is a delicious treat! Essentially, it’s a combination of cocoa butter and cream, milk, or milk solids (at least 20% and 14% respectively). White chocolate can also contain vanilla, and is sweeter than dark chocolate.
Dark Chocolate
There are two different types of dark chocolate: bittersweet and semisweet. The main difference between these two is that semisweet dark chocolate contains more sugar than bittersweet chocolate. Each form contains a relatively high amount of chocolate liquor – usually at least 35%, but it can vary. The flavors of dark chocolate can range from fruity to bitter, but they all contain high levels of antioxidants due to the large amount of cocoa they contain.
