What is marzipan, anyway? Find out more about this unique sweet!

If you’d like to broaden your taste palette, you should know that Wockenfuss offers assorted fruit-shaped and pistachio marzipan dark chocolate as two of our many candy specialties. The history of chocolate bars and treats is always an interesting topic, and marzipan is especially so! Today, we’d like to shed light on this special treat used to make not only candies but icing sugar, fruit cakes, cupcakes, and fruit bread.  

Marzipan Defined

Marzipan is a confection consisting of sugar, honey, and almond meal and sometimes augmented with almond extract or oil. Middle Eastern and Mediterranean regions have used this paste for centuries, even as a sculptural component. Marzipan is made by cooking almonds and syrup together, then crystallizing the mixture. You can also mix ground almonds with a premade fondant and powdered sugar, or use egg whites or gelatin for binding. This paste is ideal for making decorative shapes, as in the case of our fruit-shaped candies. If you love almonds, this treat is worth trying. 

How do Marzipan and Almond Paste Differ? 

Marzipan and almond paste aren’t interchangeable. Marzipan utilizes additional ingredients such as more egg and sugar to make it sweeter and smoother than almond paste. It won’t have the same taste or texture if you swap one out for the other. 

Uses

Marzipan holds shape with ease. You can cut it out or mold it to make figures to decorate holiday pastries. You can also use it as a heavy-duty frosting for Christmas cakes like fruitcakes. It keeps cakes moist and prevents them from becoming stale. And of course it’s available as a candy! Our marzipan comes in colored and shaped to resemble an assortment of fruits and is packaged to show off this confection’s prettiness. 

Marzipan is used in baked goods in many parts of the world. Israeli shops sell babkas (sweet, braided bread) and rugelach (bite-sized cookies flavored with cream cheese dough rolled around various fillings such as nut, poppy seed paste, chocolate, or jam). Challah is another bread variety that can use marzipan as a delicious flavoring.
